Where does DYU honey come from?
We source our honey from the Western Ghats region in Karnataka which is very rich in its flora & fauna and that’s what makes our multi floral honey very rich in nutritional value as well as taste. Our bee keepers go through this extra effort & keep the bee hives amidst plantation, spread across forest & basically as close to nature as possible.
They also ensure that harvesting is only done once the bee hive is completely sealed off by the honey bees & the honey has gone through its complete cycle. What this does is that it ensures that there is lesser moisture content in the honey itself, but coming from the Western Ghats region which receives very high rainfall & due to its tropical climate, the honey that comes from this region tends to have a little more moisture content in it than honey from other dry regions. Now our honey comes from this particular honey bee called as the Apis Cerana Indica which is also known as the Indian Honey bee. Now this honey bee is very native to the Asian & Indian subcontinent which makes it very resilient to any of the diseases as compared to any other imported honey bees and is also very conducive to Indian weather.
What is the difference between DYU Pure Raw & DYU Pure Artisanal Honey?
We currently have 2 kinds of Honey: DYU - Pure Artisanal Honey & DYU - Pure Raw Honey
DYU - Pure Artisanal Honey
Is micro filtered honey. DYU - Pure Artisanal Honey is Agmark certified A grade honey. Agmark requires us to micro filter the honey for their certification. And hence DYU - Pure artisanal Honey does undergo a micro filtering process. This process is such that all the natural qualities, properties & flavour of honey is well retained. There is no additional processing involved other than the filtering requirement.
DYU - Pure Raw Honey
Is pure raw honey. Raw Honey is the most natural & pure form of honey as the honey bees have produced and as is available in nature. If we were to define it, it is “honey as it existed in the bee hive & is obtained through extraction, settling or straining; without any heat being added to it”. DYU - Pure Raw Honey is unprocessed, unheated & unpasteurised.
Is DYU Indian Native Bee honey
DYU honey is from Apis Cerena Indica Bee, also one of the Indian native honey bee. It is smaller as compared to Apis mellifera, the commercially used italian honey.
What is Pure Raw Honey ?
Raw Honey is the most natural & pure form of honey as the honey bees have produced and as is available in nature. If I were to define it for you, it is “honey as it existed in the bee hive & is obtained through extraction, settling or straining; without any heat being added to it”.
So when we say strained honey it means that once honey has been extracted from the honey comb it is made to pass through a mesh or let’s say a muslin cloth to ensure that any other external impurities if any have been removed and there is absolutely no heat that has touched honey.
How to identify pure raw honey in a bottle ?
Now if we were to hold a clear bottle of honey you would see that raw honey would be a little more visually smoky or cloudier or a little frothy.
Does honey crystallise?
Crystallisation or also known as granulization is a very natural process that occurs in pure honey. So a lot of consumers think that when they see a bottle of crystallised honey, they think that something has been added to it, it has gone bad, it hasn’t been stored properly or its adulterated but it’s not so … it’s quite the opposite.
If you find a jar in your kitchen which has honey in the crystallised state, rest assured it’s good for human consumption. You could just place this bottle of honey in warm water & then comes back to its liquid state. In fact you could also just scoop out this crystallised honey & eat it as is or you know spread it on bread or chapathi like a spread & consume it and it tastes the same .. it tastes yumm !!! So please remember that crystallised honey does not change the quality or the taste of honey. What it actually does is it changes the way honey looks & the texture of honey. That’s about it.
All DYU honey crystallises over a period of time. It comes in glass bottle, so dip it in HOT Water for 30-40 mins and see it regain its earlier liquid state.
Why honey crystallises ?
Honey is a highly concentrated solution. If you have to break down & see the composition of honey, it is made up of about 20 - 22 % water and the rest of it almost 70 % of it is fructose & glucose. So there is soo much of fructose & glucose in honey, you know .. more than water can dissolve it.
So the water content is so low that it does not … it cannot dissolve the fructose & glucose.
Now glucose is actually the culprit in a way .. it’s the reason why honey crystallises. Glucose has lower solubility as compared to fructose. So what it does is it separates itself away from water & it forms these little white crystals and that’s how crystallisation occurs.
Do all Honey Crystallise at the same rate?
No two honey are the same. Different honeys can crystallise at different rate. Honey A could crystallise you know within a month or two months whereas honey B could crystallise … could take up to 2 years for crystallisation.
There are several factors which dictate crystallisation. One of course is that the composition of honey. The composition of fructose & glucose in a particular kind of honey is one of the reasons.
Also there are a whole lot of minerals, enzymes, amino acids, protein, vitamin & acids which are present in honey and then the composition of these could also vary the rate at which different honey crystallises. Again the nectar source.. you know where the nectar comes from, the different parts of the world, the different regions, climatic conditions, weather, temperature, all of this.. humidity & all of this play a huge role in deciding the rate of crystallisation.
How to store honey ?
Honey is best stored in ceramic or glass. What happens when you store honey non food grade plastic or metal containers is that it cause honey to oxidise. So please remember always, or the best place to you know keep your honey is a nice glass jar, tightly sealed so that air does not escape into it.

It is is one of the predominant indegenous bees native to India, Pakistan, Nepal, Burma, Bangladesh, Sri Lanka, Thailand and mainland Asia. Being a native bee, apis cerana indica is lesser prone to diseases as compared to the imported species & does not survive on sugar syrup.
Our honey is multifloral and natural honey collected from beehives spread the western ghat regions of South karnataka. Thus we claim DYU to be pure and natural.
Is your honey free from antibiotics?
DYU - Pure Artisanal Honey and Pure Raw Honey is pure, naturally extracted Apis Cerana Indica honey from the forests of western ghats in Dakshina Kannada. Apis Cerana Indica also called as the Indian honey bee is a subspecies of Asiatic honey bee. It is is one of the predominant indegenous bees native to India, Pakistan, Nepal, Burma, Bangladesh, Sri Lanka, Thailand and mainland Asia.
This particular species of honey bee is lesser prone to diseases as compared to the imported species and does not survive on sugar syrup. This is because this bee is more conducive to the Indian weather as it is native to the land.
Further honey bees go into hibernation during rainy season. We respect that and do not do any harvesting during the hibernation period and let the bees take their normal course.
Honey is graded based upon several factors including water content, flavour & aroma, absence of defects (chemicals, antibiotics, etc) and clarity.
DYU - Pure Artisanal Honey is Agmark certified “A” grade honey. Every batch of honey that we procure is tested for purity. Several tests are conducted by Agmark and only if the results are within the permissible limits of specified parameters, honey is graded as “A Grade Honey”.
It means that the “honey has a good, normal flavour and aroma form the predominant floral source/sources and the honey is free from caramelized flavour or objectionable flavour caused by fermentation, smoke, chemicals or other causes with the exception of the predominant floral source. It also means that it is practically free of any defects that affect the appearance or edibility of the product.”
Is the honey sourced ethically without killing/harming the bees?
In the words of Einstein “If the bee disappeared off the face of the Earth, man would only have four years left to live.”
Bees are fascinating creatures and it is in our best interest to take care of them and protect them. We depend on the bees much for our diet, the livelihood of beekeepers & farmers, pollinations and ecological balance.
So to answer your question, “YES” we work with beekeepers who put the bees and the health of the environment first, using healthy, ethical & sustainable bee keeping and harvesting methods and practices.
Is DYU - Pure Artisanal Honey pasturized?
DYU - Pure Artisanal Honey is not pasturized. It is agmark certified A grade honey. Agmark requires us to micro filter the honey for their certification. And hence DYU - Pure artisanal Honey does undergo a micro filtering process. However this process is such that all the natural qualities of honey is well retained.
How can I ensure it is 100% pure honey. Is there any method to test it?
There are three home tests for honey which are widely accepted across the world,
Match Stick Test:
Take a match stick dip it in the honey and try to light it. the match stick should light. This is a confirmation that the moisture level is low and there is no external contamination.
Take any tissue or blotting paper and drop honey on the same, honey should not fall through it for a reasonable period of time. The surrounding area of the paper around honey could still look moist. Remember Honey has a moisture content varying from 14 - 25%, depending on which region and what flora fauna honey has come from. Normally tropical honey has more moisture content. DYU - Pure Artisanal Honey is Agmark certified A grade honey, which means it has moisture content between 20 - 22%.
Pour a spoonful of honey into a glass of water and majority of it should straight go to the bottom and create a lump. Most likely it should not dissolve into the water for a reasonably long period of time. However, during its journey to the bottom of the glass it will appear that some of it is merging with the water, remember this is the moisture content and this is natural.
Apart from this The thumb test is to test the viscosity - a measure of thickness and flow. Honey viscosity would vary from honey to honey based on the moisture %. As mentioned DYU - Pure Artisanal Honey and Pure Raw honey is tropical honey and the moisture % varies between 20 -22%, hence a little thinner than honey from dry regions.
While these tests are widely accepted however they are not completely conclusive, hence there are certification by the govt food bodies across the world. In India the certification is given by Agmark. DYU - Pure Artisanal Honey is Agmark certified A grade honey.
Taste is natural and good. Why the consistency of honey is very thin?
DYU Pure Artisanal Honey is Agmark certified A grade honey, which means that moisture content is less than 22%. However , considering that the honey is obtained from the western Ghats of Mangalore district, which has very high rainfall as well as is humid, the honey could sometimes be a little thin compared to honey from dry regions, it is natural for honey from tropical regions. The best judge is your taste buds and Agmark A grade certification.
Do you check if the bees have been fed on sugar cane juice or sugar syrup?
DYU - Pure Artisanal Honey & Pure Raw Honey is pure, naturally extracted Apis Cerana Indica honey from the forests of western ghats in Dakshina Kannada. This particular species of honey bee does not survive only on sugar syrup. So the question of feeding it sugar cane juice or sugar syrup to induce hunger does not arise. We would like the bees to take their normal course & go foraging for nectar. DYU honey is honey which is derived from natural floral nectar. Further honey bees go into hibernation during rainy season. We respect that and do not do any harvesting during the hibernation period.
What does natural sugar means? Does DYU honey have Sugar?
DYU - Pure Artisanal Honey contains artificially added refined/processed sugars, the answer is a big NO.
Sugar is the generic name for sweet-tasting, soluble carbohydrates, many of which are used in food. There are various types of sugar derived from different sources. Natural sugar refers to sugars that occur naturally in foods. For example, fructose is a sugar found in fruits & lactose is a natural milk sugar. There are also sugars that are naturally produced such as honey, stevia, agave nectar, etc.
Honey is a sweet, natural, viscous substance produced by bees from floral nectar. The mixture of sugars in honey is mainly fructose & glucose. These are simple sugars known as monosaccharides & honey gets its sweetness from them. White processed sugar on the other hand contains sucrose which is a compound sugar i.e., disaccharide.
Refined sugar also referred to as table sugar, is sugar that has undergone processing & is made from sugar cane or or sugar beets.
Honey is produced by bees from the sweet nectar found in flowers and that is completely natural and makes it a healthier choice as compared to white, refined sugar.
May I know why Expiry date is mentioned when honey has no expiry when stored in glass bottle ?
Natural Honey is the only biological product which doesnt deteriorate with time as long as it is stored in air tight ceramic or glass container. Hence technically the shelf life of honey is infinite. You will find DYU only in glass bottles.
Honey when stored in a cool dry place & in an air tight glass container can be kept for years and is still good to use. Honey is one of the wonders that nature has provided us which has an endless shelf life. The appearance of honey could change but remains good for consumption.
However there are legal and commercial requirements due to which a "best before" needs to be specified. In India we need to follow FSSAI & AGMARK guidelines for the same. Also please note that what is mentioned on the bottle is "best before" and not an "expires in" .
